Mama's Orange & Chocolate Bundt Cake

كيكة الشوكولاتة والبرتقال

Is there a specific dessert that reminds you of your mama? My favorite dessert that my mom makes is her orange and chocolate bundt cake. It's a super delicious, melt-in-your-mouth orange flavored cake that has swirls of chocolate throughout. It was my favorite after school snack enjoyed with a cold glass of milk.

This cake comes together in a few minutes and bakes in under an hour. You can easily omit the chocolate and bake it as a plain orange bundt cake, but I just think the chocolate adds such a wonderful flavor.

Enjoy this with your afternoon coffee or tea (or for breakfast, I won't judge)!

Sahtain :)

Mama's Orange & Chocolate Bundt Cake

كيكة الشوكولاتة والبرتقال

Servings: 12

Prep Time: 10 minutes

Cook Time: 45-50 minutes

Ingredients:

4 eggs

1 cup cane or white sugar

1 teaspoon vanilla extract, or 1 packet of vanilla sugar

1 cup vegetable oil

3/4 cup freshly squeezed orange juice (regular orange juice works, too!)

1 tablespoon orange zest (optional)

2 cups all-purpose flour

1/4 teaspoon salt

1 tablespoon baking powder

2 tablespoons unsweetened cocoa powder

Directions:

1) Preheat your oven to 370*F.

2) Grease the bottom and sides of a 12-cup bundt pan generously.

3) In a bowl, combine flour, salt, and baking powder. Whisk and set aside.

4) In the bowl of your stand mixer (or with an electric mixer), beat eggs, sugar, and vanilla on high speed for 2 minutes. Add the oil, orange juice, and orange zest and beat for another minute.

5) Slowly add flour mix and mix on low speed until combined. Don't over mix.

6) Pour half of your cake mix into the bundt pan.

7) To the rest of you cake batter, add the unsweetened cocoa powder and whisk until the cocoa is fully incorporated. Pour chocolate batter into the bundt cake. Swirl a knife or skewer in the batter to make the marble effect.

8) Bake for 45-50 minutes, or until a toothpick inserted into the cake comes out clean.

9) Let your cake cool for at least 30 minutes.

10) Invert the slightly cooled bundt cake onto a serving plate. Slice and serve!

Notes:

1) If you don't have oranges, you can easily use orange juice. However, you need to make sure it is 100% juice, without added sugars.

2) Orange zest is optional, but adds wonderful flavor.

3) It's very important to use unsweetened cocoa powder. The recipe already calls for 1 cup of sugar. Adding sweetened cocoa powder will make it too sweet. You can adjust by lowering the amount of sugar.
